Ingredients

Sauce

  • 1/3 cup balsamic vinegar
  • 2 Tbsp. honey
  • 2 Tbsp. oil, such as avocado or olive oil

  • 1 Tbsp. Dijon mustard
  • Kosher salt and fresh black pepper, to taste

Tomato & Cheese Topping

  • 8 oz. grape tomatoes, halved
  • 8 oz. fresh mozzarella balls (ciliegine or pearls)
  • 2 Tbsp. finely chopped fresh basil
  • Kosher salt and fresh black pepper, to taste

Chicken

  • 2 lb. boneless, skinless chicken breasts, pounded to even thickness
  • 2 Tbsp. avocado oil or other high-heat oil
  • Kosher salt and fresh black pepper, to taste

Instructions

  1. Prepare the Sauce: In a bowl, whisk together the balsamic vinegar, honey, 2 tablespoons of oil, minced garlic, Italian seasoning, and Dijon mustard. Season with salt and pepper to taste. Set the sauce aside.
  2. Mix the Tomato and Cheese: In another bowl, combine the halved grape tomatoes, fresh mozzarella balls, and finely chopped fresh basil. Season the mixture with salt and pepper to your preference and set it aside.
  3. Preheat the Oven: Set your oven to 400 degrees Fahrenheit to preheat while you prepare the chicken on the stovetop.
  4. Sear the Chicken: Heat 2 tablespoons of avocado oil in a large oven-safe skillet over medium-high heat until shimmering. Season the chicken breasts generously on both sides with salt and pepper. Place the chicken in the skillet in a single layer and cook for 1-2 minutes per side, until they develop a light golden-brown crust. Pour the prepared balsamic sauce over the chicken and let it come to a simmer while scraping up any browned bits from the pan with a wooden spoon.
  5. Add Tomato and Cheese: Remove the skillet from the heat immediately and evenly spoon the tomato and mozzarella mixture over the chicken breasts.
