A simple, tangy, and slightly sweet balsamic vinaigrette dressing perfect for salads or as a marinade, made with extra-virgin olive oil, balsamic vinegar, honey, and Dijon mustard.

Ingredients

Base Ingredients

  • 1/2 cup extra-virgin olive oil
  • 2 Tbsp. good-quality balsamic vinegar
  • 2 Tbsp. honey or maple syrup, plus more to taste
  • 1 tsp. Dijon mustard, plus more to taste
  • Kosher salt, to taste
  • Fresh black pepper, to taste

Optional Add-ins

  • Minced garlic
  • Minced shallots
  • Dried spices such as oregano or Italian seasoning

Instructions

  1. Combine Ingredients: Whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, kosher salt, and fresh black pepper until well emulsified. Alternatively, place all ingredients in a mason jar with a lid and shake vigorously until fully combined.
  2. Taste and Adjust: Sample the dressing and adjust the seasoning by adding more honey for sweetness or more Dijon mustard for tanginess if desired. Incorporate any optional add-ins such as minced garlic, shallots, or herbs to customize the flavor.

Notes

  • This vinaigrette can be stored in the refrigerator for up to one week; shake well before each use.
  • For a vegan version, substitute honey with maple syrup.
  • Adjust the balance of sweetness and acidity to match your personal preference.
  • Use as a salad dressing or marinade for vegetables and meats.
