Ingredients

Salmon and Seasoning

  • 1 pound salmon fillets (cut into 1-inch cubes)
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon black pepper

Bang Bang Sauce

  • 1/2 cup kewpie mayo (or regular mayonnaise)
  • 1/3 cup sweet chili sauce
  • 2 tablespoons sriracha
  • 1 tablespoon lime juice

Bowl Components

  • 2 cups cooked rice
  • ½ cucumber (sliced into half moons)
  • 1 avocado (diced)
  • 1 cup shelled edamame
  • 3 green onions (sliced)
  • 1 teaspoon sesame seeds
  • 1 teaspoon furikake seasoning (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375 degrees Fahrenheit to prepare for baking the salmon.
  2. Season Salmon: In a large bowl, toss the salmon cubes with garlic powder, paprika, sea salt, and black pepper to evenly coat the fish with the spices.
  3. Mix Bang Bang Sauce: In a separate bowl, combine the kewpie mayo, sweet chili sauce, sriracha, and lime juice. Stir well until the sauce is fully mixed and creamy.
  4. Coat Salmon with Sauce: Add about half a cup of the prepared bang bang sauce to the bowl with the seasoned salmon. Toss gently to coat the salmon pieces. Reserve the remaining sauce for serving.
  5. Bake Salmon: Arrange the salmon cubes in a single layer on a parchment-lined sheet pan. Bake for 7 minutes, then remove from the oven, flip each piece carefully, and bake for another 7 minutes until cooked through and slightly caramelized.
  6. Assemble Bowls: Divide the cooked rice evenly between four bowls. Top with baked salmon, sliced cucumber, diced avocado, and shelled edamame.
  7. Garnish and Serve: Sprinkle the bowls with sliced green onions, sesame seeds, and furikake seasoning if using. Drizzle the remaining bang bang sauce over the top. Serve immediately and enjoy!

Notes

  • Use fresh salmon fillets for the best flavor and texture.
  • Kewpie mayo adds a richer taste but regular mayonnaise can be used as a substitute.
  • Furikake seasoning is optional but adds an extra umami flavor to the bowl.
  • Adjust the sriracha quantity to control the spiciness of the sauce.
  • Cooked rice can be prepared ahead of time to speed up meal preparation.
  • Ensure salmon pieces are evenly sized for uniform cooking.
