Ingredients

Sweet Potatoes

  • 4 small sweet potatoes

BBQ Chicken Filling

  • 2 cups shredded chicken (rotisserie chicken recommended)
  • 1/2 cup BBQ sauce (store-bought or homemade)
  • 1/2 cup shredded Monterey Jack cheese (or cheddar cheese)

Toppings

  • Corn salsa (to taste)
  • Pickled red onions (to taste)
  • Chopped avocado (to taste)
  • Cilantro (fresh, chopped, to taste)

Instructions

  1. Preheat and Roast Sweet Potatoes: Preheat your oven to 425°F. Line a baking sheet with foil. Prick the sweet potatoes several times with a fork to allow steam to escape. Place the sweet potatoes on the prepared baking sheet and roast for 40 to 50 minutes, or until they are tender when pierced with a fork.
  2. Prepare BBQ Chicken Mixture: While the sweet potatoes are roasting, combine the shredded chicken and BBQ sauce in a medium bowl. Stir well to ensure the chicken is evenly coated with the sauce.
  3. Scoop and Stuff Sweet Potatoes: Once the sweet potatoes are roasted, carefully remove them from the oven. Using a knife and fork, slice each sweet potato open lengthwise and fluff the insides gently to create a soft bed. Spoon the BBQ chicken mixture evenly into each sweet potato and sprinkle with shredded Monterey Jack cheese.
  4. Broil to Melt Cheese: Place the stuffed sweet potatoes under the oven broiler on high for 2 to 3 minutes, or until the cheese is melted and lightly browned. Watch carefully to prevent burning.
  5. Add Toppings and Serve: Remove the potatoes from the oven and top with desired amounts of corn salsa, pickled red onions, chopped avocado, and fresh cilantro. Serve immediately while warm for the best flavor and texture.

Notes

  • You can substitute Monterey Jack cheese with cheddar or your preferred melting cheese.
  • If you don’t have rotisserie chicken, cooked shredded chicken from another source works well.
  • Pickled red onions add a tangy crunch but can be omitted or replaced with fresh red onions if preferred.
  • Customize toppings according to your taste—jalapeños or sour cream can be great additions.
  • To save time, sweet potatoes can be microwaved for 8-10 minutes before stuffing, though roasting enhances flavor.
