  • 1 (1-ounce) packet taco seasoning
  • 3/4 cup mild red enchilada sauce
  • 1 (15-ounce) can black beans, drained and rinsed (optional)
  • 1 batch cilantro-lime rice (or white rice, see notes)
  • 8 large (10-inch) flour tortillas
  • 1 (16-ounce) can refried beans
  • 2 packed cups sharp Cheddar cheese, freshly shredded

Instructions

  1. Sear: Heat the olive oil in a large skillet over high heat. Add the finely diced yellow onion and sauté until golden, about 3 minutes, then push onions to the edges of the pan.
  2. Cook Beef: Add ground beef to the center of the skillet and sear until brown. Crumble the beef and continue cooking until fully cooked through, about 3 to 5 minutes. Drain any excess grease if necessary.
  3. Simmer: Reduce heat to medium. Stir in the taco seasoning and cook until fragrant and fully combined, about 1 to 3 minutes. Add the red enchilada sauce and let the mixture simmer until it thickens slightly. Remove from heat, then fold in the drained and rinsed black beans if using. Allow the mixture to cool slightly.
  4. Prepare Rice: Prepare the cilantro-lime rice or plain white rice as desired according to your preferred method or recipe.
  5. Assemble Burritos: Lay out the large flour tortillas flat. Spread a layer of refried beans evenly across each tortilla. Add an even distribution of the beef mixture, cilantro-lime rice, and shredded sharp Cheddar cheese. Add any desired toppings inside before rolling.
  6. Roll Burritos: Roll up each tortilla tightly to enclose the filling completely.
  7. Bake: Preheat the oven to 375°F (190°C). Lightly spray the assembled burritos with cooking spray, rubbing it evenly for crisping. Coat a large, dark-colored baking sheet with cooking spray and place the burritos spaced apart on the sheet. Bake for 8 minutes, then flip each burrito and bake for another 5 minutes until the tortillas are crisp and golden.
  8. Serve: Remove burritos from the oven and let cool for 5 minutes. Serve hot with your favorite toppings such as sour cream, avocado, guacamole, pico de gallo, and salsa.

Notes

  • Note 1: You can use store-bought taco seasoning or make your own with a blend of chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt, and pepper.
  • Note 2: Mild red enchilada sauce can be substituted with your preferred enchilada sauce variety or a mild salsa roja for a similar flavor.
  • Note 3: For cilantro-lime rice, cook white rice as usual and then mix with freshly chopped cilantro, lime juice, and a little salt to taste.
  • You can optionally crisp the burritos in a pan on the stovetop instead of baking for a quicker method.
  • Black beans are optional but add extra fiber and texture for a heartier burrito.
