  • 1 cup all-purpose flour

Instructions

  1. Preheat and Prepare the Dish: Preheat your oven to 350°F (175°C). Grease a 10-inch baking dish thoroughly with softened butter to prevent sticking and ensure easy release of the clafoutis after baking.
  2. Make Lavender Sugar: In a blender or food processor, combine the granulated sugar and dried lavender. Pulse several times until the lavender and sugar are finely ground and well combined. Remove half of this lavender sugar mixture and set it aside for topping later.
  3. Prepare the Batter: To the blender containing the remaining lavender sugar, add whole milk, large eggs, vanilla extract, kosher salt, and all-purpose flour. Blend all ingredients until the batter is completely smooth and homogenous, ensuring no lumps remain for a silky texture.
  4. Assemble the Clafoutis: Pour the smooth batter into the prepared greased baking dish. Evenly sprinkle fresh blackberries and white chocolate chips over the surface of the batter. Then, sprinkle the reserved half of the lavender sugar evenly on top to create a fragrant, sweet crust once baked.
  5. Bake: Place the baking dish in the center of the oven and bake for approximately 30 minutes. Bake until the clafoutis is golden brown on top, puffed at the edges, and set in the center. It will slightly deflate upon cooling, which is normal.
