This Blueberry Crisp combines juicy blueberries with a buttery, spiced topping for a warm, comforting dessert. The crisp streusel adds a perfect crunch, making this a family favorite treat.

Ingredients

1 ½ cups all-purpose flour

¾ cup brown sugar

½ cup cold butter, diced

½ teaspoon salt

1 cup white sugar

¼ cup orange juice

2 tablespoons instant tapioca

1 teaspoon cinnamon

6 cups fresh blueberries

Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or a similar-sized baking pan.
  2. In a medium-sized bowl, combine the flour, brown sugar, salt, and diced cold butter. Use a pastry cutter or your fingers to work the butter into the dry ingredients until the mixture resembles coarse crumbs. Set aside.
  3. In a large bowl, combine the fresh blueberries, white sugar, orange juice, instant tapioca, and cinnamon. Toss to coat the blueberries evenly with the sugar and spices.
  4. Pour the blueberry mixture into the prepared baking dish, spreading it out evenly.
  5. Sprinkle the flour and butter mixture evenly over the blueberries, covering the entire surface.
  6. Bake in the preheated oven for 40-45 minutes, or until the topping is golden brown and the filling is bubbly.
  7. Allow the crisp to cool for about 10-15 minutes before serving. This will allow the filling to thicken up and make it easier to serve.

Notes

For a heartier topping, stir in 1 cup of rolled oats to the flour mixture.

Add other berries like raspberries, blackberries, or strawberries for a mixed berry crisp.

Add chopped walnuts, almonds, or pecans to the topping for added crunch.

To make this vegan, substitute the butter with a plant-based butter and use coconut sugar instead of white sugar.
