Crispy and flavorful boneless buffalo wings made with tender chicken breast pieces, coated in a seasoned flour mixture, baked to perfection, and tossed in spicy buffalo sauce. Perfect as a snack or appetizer served with ranch or blue cheese dressing.

Ingredients

Chicken

  • 1 1/2 pounds chicken breast (boneless, skinless)
  • 2 large eggs (beaten)

Coating

  • 1 cup all purpose flour
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper

Sauce

  • 1 cup buffalo sauce

Garnish (optional)

  • Sliced green onions
  • Minced parsley

To Serve

  • Ranch or blue cheese dressing

Instructions

  1. Prepare the chicken: Cut the chicken breasts into 2 inch pieces and set them aside.
  2. Mix eggs and seasoning flour: Crack 2 eggs into a medium bowl and whisk gently. In another medium bowl, combine the flour with salt, pepper, garlic powder, onion powder, chili powder, and cayenne pepper; mix well.
  3. Coat the chicken: Dip each chicken piece first into the beaten eggs, then fully coat it with the seasoned flour mixture. Tap off any excess flour and place the pieces on a rimmed baking sheet lined with parchment paper or brushed with olive oil.
  4. Prepare for baking: Lightly spray the coated chicken pieces with olive oil cooking spray to help them crisp up during baking.
  5. Bake the chicken: Bake in a preheated oven at 450°F (232°C) for 12-15 minutes, or until the internal temperature reaches 165°F (74°C) and the coating is crispy and golden.
  6. Toss with buffalo sauce and garnish: Remove baked chicken from the oven and toss the pieces in buffalo sauce to coat evenly. Garnish with sliced green onions and minced parsley if desired.
  7. Serve: Serve immediately with ranch or blue cheese dressing on the side for dipping.

Notes

  • Using olive oil cooking spray helps achieve a crispy coating without deep frying.
  • Ensure the chicken reaches an internal temperature of 165°F for safe consumption.
  • Adjust cayenne pepper amount to control the spice level of the coating.
  • For extra crispiness, you can broil the wings for 1-2 minutes after baking but watch closely to avoid burning.
  • Buffalo sauce can be bought pre-made or homemade depending on preference.
