These Brie and Jam Puff Pastry Bites are elegant, bite-sized appetizers perfect for entertaining. Ingredients

Puff Pastry

  • ½ batch rough puff pastry or classic puff pastry (or store-bought, see notes)
  • All-purpose flour, for work surface
  • Egg wash (1 egg whisked with 1 teaspoon of water or cream)

Fillings

  • 1 cup jam of choice
  • 4 ounces brie cheese, cut into ½-inch pieces (rind optional)
  • 4-6 sprigs of fresh rosemary

Instructions

  1. Prepare Pastry: Prepare rough puff pastry or defrost frozen puff pastry, using only half the batch for this recipe. You can freeze the remaining half or double the filling to make more bites.
  2. Preheat Oven: Heat the oven to 400ºF (204ºC). Position an oven rack in the middle and line a baking sheet with parchment paper.
  3. Roll Out Pastry: On a floured surface, roll out the puff pastry to about ⅛-inch thickness forming a 10-by-14-inch rectangle. For store-bought pastry, simply unfold and lay it out on a floured surface.
  4. Cut Circles: Use a 2¾-inch round cutter to stamp out at least 16 circles closely placed on the pastry. Avoid re-rolling scraps and save them for another use.
  5. Dock Pastry: Using a 2-inch cutter, press an indentation in the center of each circle without cutting through. Then, dock the center with a fork to prevent excessive rising during baking.
  6. Arrange and Egg Wash: Place the pastry rounds on the prepared baking sheet spaced evenly. Brush each gently with the egg wash.
  7. Chill Pastry: Set the baking sheet in the freezer or refrigerator while preparing the fillings to firm the pastry.
  8. Prepare Brie: Cut brie into ½-inch pieces with rind on or off according to preference, and keep refrigerated until use.
  9. Prepare Jam: Spoon the jam into a pastry bag or resealable plastic bag for easy piping.
  10. Par-Bake Pastry: Bake the chilled pastry rounds for 12 minutes until puffed but not browned.
  11. Fill Pastry: Quickly press down the puffed centers using a small cutter or spoon. Pipe about 2 teaspoons of jam into each indentation, then top with a piece of brie.
  12. Final Bake: Return the filled pastries to the oven and bake for 5–8 minutes until the pastry is golden and the brie has started to melt.
  13. Cool: Remove from oven and allow bites to cool slightly on the baking sheet before transferring to a wire rack.
  14. Garnish and Serve: Chop fresh rosemary and sprinkle over the warm or room-temperature tarts just before serving to add an aromatic herbal note.

  • You can use store-bought puff pastry to save time; just follow thawing instructions.
