This Buffalo Chicken Cottage Cheese Bowl is a quick and nutritious dinner option combining tender shredded chicken tossed in spicy Buffalo wing sauce with creamy cottage cheese, fresh celery, and shredded carrot. Finished with a drizzle of Ranch dressing and a sprinkle of green onions, it offers a perfect balance of flavors and textures in just 15 minutes.

Ingredients

Chicken and Sauce

  • 2 large chicken breasts (skinless and boneless)
  • 4 tbsp Buffalo wing sauce

Vegetables

  • 2 small stalks celery (diced)
  • 1 carrot (shredded)

Dressing and Garnish

  • 1 cup cottage cheese
  • 4 tbsp Ranch dressing
  • Green onion (chopped for garnish)

Instructions

  1. Cook the chicken: Place the skinless, boneless chicken breasts into a saucepan and cover with water. Set the saucepan over medium-high heat and bring the water to a boil. Once boiling, reduce the heat to maintain a gentle boil and cook the chicken for approximately 10 minutes until fully cooked through.
  2. Shred the chicken: Remove the cooked chicken breasts from the saucepan and use two forks to shred the meat into bite-sized pieces, ensuring even texture for tossing with sauce.
  3. Toss with Buffalo sauce: Add 4 tablespoons of Buffalo wing sauce to the shredded chicken and mix thoroughly until the chicken is completely coated with the spicy sauce.
  4. Assemble the bowls: Evenly divide the cottage cheese, diced celery, shredded carrot, and Buffalo chicken between two bowls. Drizzle each bowl with 2 tablespoons of Ranch dressing.
  5. Garnish and season: Sprinkle chopped green onions on top of each bowl. Taste and add salt and pepper as needed to enhance the flavors before serving.

Notes

  • You can substitute Buffalo wing sauce with your preferred hot sauce for a different flavor profile.
  • For a creamier texture, use full-fat cottage cheese or Greek yogurt instead.
  • Optional: Add a squeeze of lemon juice to brighten the flavors.
  • This dish can be served warm or chilled depending on preference.
  • To reduce sodium, choose low-sodium Buffalo sauce and Ranch dressing.
