Ingredients

Meatballs

  • 1 pound ground chicken
  • 1/2 cup panko breadcrumbs

  • 1/4 cup buffalo wing sauce

  • Buttermilk or milk (2-3 tablespoons to thin)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it to prevent sticking.
  2. Make the meatball mixture: In a large bowl, combine ground chicken, panko, shredded carrots, chopped green onions, fresh parsley, 1/4 cup buffalo wing sauce, garlic powder, onion powder, paprika, kosher salt, and black pepper. Gently mix until ingredients are just combined, taking care not to overwork the mixture to keep the meatballs tender.
  3. Form the meatballs: Using a cookie scoop or your hands, shape the mixture into evenly sized meatballs, about 2 tablespoons each. Place them spaced slightly apart on the prepared baking sheet to allow even cooking.
