Ingredients

Pita Chips

  • 2 slices pita bread
  • 3 Tablespoons olive oil
  • 1/2 teaspoon sumac (optional)
  • Sea salt or flake salt, to taste

Salad

  • 6-8 cups mixed greens lettuce
  • 1 English cucumber, sliced
  • 5 campari tomatoes (or heirloom tomatoes), quartered or chopped
  • ½ cup Kalamata olives, pitted and halved
  • 1/3 small red onion, sliced thinly
  • 8 oz burrata, broken into pieces
  • 1 cup fresh chopped basil
  • 1/3 cup fresh chopped dill

Dressing

  • 1/3 cup extra virgin olive oil
  • Zest and juice from 1 lemon
  • Fresh cracked sea salt or finishing salt, to taste

Instructions

  1. Toast Pitas: Break the pita bread into small bite-size pieces. Heat 3 tablespoons of olive oil in a large pan over medium heat until shimmering. Add the pita pieces and fry briefly, tossing frequently, until they are browned and crisp. Use tongs to transfer the toasted pita chips to a plate lined with paper towel to drain excess oil. Season immediately with salt and optional sumac for a tangy flavor.
  2. Assemble Salad: In a large bowl, add the mixed greens as the base. Top with sliced cucumber, quartered tomatoes, halved Kalamata olives, and thinly sliced red onion. Tear or cut the burrata into chunks and arrange them evenly on top of the salad. Sprinkle the fresh chopped basil and dill over everything.
  3. Make Salad Dressing: In a small bowl, combine the lemon juice, lemon zest, and extra virgin olive oil. Whisk or stir well to emulsify. Drizzle this bright dressing over the prepared salad. Finish with a sprinkle of fresh cracked sea salt or flake salt to enhance all the flavors.
  4. Serve: Serve the salad immediately, topped with the warm and crispy toasted pita chips on the side or sprinkled over the salad for texture and flavor contrast.

Notes

  • Sumac adds a lemony tang to the pita chips but is optional if you do not have it on hand.
  • Use fresh burrata for the creamiest texture and flavor; if unavailable, fresh mozzarella can be a substitute though less creamy.
  • Feel free to customize the salad by adding other Mediterranean ingredients such as artichoke hearts or roasted red peppers.
  • For a gluten-free option, substitute pita chips with gluten-free crackers or toasted nuts.
  • To keep the salad fresh, dress it just before serving to avoid soggy greens.
