Savor the delicious simplicity of Burrata Tomato Toast, a quick and flavorful dish combining toasted bread, creamy burrata cheese, and roasted cherry tomatoes, finished with fresh basil and a hint of garlic. Perfect for a light lunch or elegant appetizer.

Ingredients

Bread and Oil

  • 2 thick pieces of bread
  • 3 tablespoons olive oil (plus extra as needed)

Vegetables and Cheese

  • 1 clove garlic
  • 1 pint cherry tomatoes
  • 1 ball burrata cheese
  • fresh basil (to taste)

Seasonings

  • Kosher salt (to taste)
  • freshly cracked black pepper (to taste)

Instructions

  1. Preheat and Toast the Bread: Preheat your oven to 400 degrees F. Drizzle the bread slices generously with olive oil on both sides and place them on a baking sheet. Bake for 10 minutes until they are golden and toasted to perfection.
  2. Infuse Bread with Garlic Flavor: Remove the toasted bread from the oven and while it’s still warm, carefully rub the cut side of a garlic clove over the surface of each slice to impart a subtle garlic aroma and flavor.
  3. Roast the Cherry Tomatoes: Drizzle the cherry tomatoes with olive oil and season them with kosher salt and freshly cracked black pepper. Spread them on a roasting pan and place back in the oven for about 10 minutes, until the tomatoes are soft and just beginning to burst.
  4. Assemble the Toast: Spoon a generous amount of creamy burrata cheese over each slice of toasted bread. Top with the roasted burst cherry tomatoes and finish with fresh basil leaves scattered over the top for a fragrant, fresh touch.

Notes

  • Use thick, rustic bread like sourdough or country loaf for best texture and flavor.
  • Adjust olive oil quantity as needed to lightly coat bread and tomatoes.
  • Fresh basil can be substituted with oregano or parsley if preferred.
  • This recipe is best served immediately for optimal texture and freshness.
  • To make it vegan, replace the burrata with a plant-based cheese spread.
