Butter Cracker Chicken is a flavorful and crispy baked chicken dish featuring boneless, skinless chicken breasts coated in a seasoned Ritz cracker crumb mixture and baked with butter for a moist, savory finish. This easy oven-baked recipe combines simple pantry staples with aromatic spices to create a deliciously crunchy crust that stays tender and juicy inside, perfect for a comforting family meal.

Ingredients

For the Crust:

  • 1 cup finely crushed Ritz crackers (or another buttery cracker)
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon cayenne pepper
  • ¼ teaspoon lemon pepper

For the Chicken:

  • 2 large eggs, beaten
  • 4 whole boneless, skinless chicken breasts
  • ½ cup (1 stick) salted butter, cut into small pieces
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 375℉ (190℃) to ensure it’s hot enough to bake the chicken evenly and achieve a crispy crust.
  2. Prepare Cracker Mixture: In a mixing bowl, combine the finely crushed Ritz crackers with Italian seasoning, garlic powder, onion powder, cayenne pepper, and lemon pepper. Mix thoroughly so the spices evenly coat the crumbs.
  3. Prepare Eggs and Chicken: Pour beaten eggs into a separate bowl. Dip each boneless, skinless chicken breast first into the eggs, allowing any excess to drip off, then dredge in the seasoned cracker crumbs until well coated.
  4. Assemble Baking Dish: Place the coated chicken breasts into a 9×13-inch baking dish in a single layer. Scatter the small pieces of salted butter evenly over the top of the chicken breasts for added moisture and flavor.
  5. Bake the Chicken: Bake in the preheated oven for approximately 30 minutes, or until the chicken reaches an internal temperature of 165℉ (74℃) and the coating is golden and crispy.
  6. Garnish and Serve: Once cooked, optionally sprinkle chopped fresh parsley over the chicken for a pop of color and fresh flavor. Serve hot and enjoy!

Notes

  • Using Ritz crackers gives the crust a buttery, rich flavor, but you can substitute other buttery crackers if desired.
  • Ensure chicken breasts are of uniform thickness for even cooking; you can pound them lightly if necessary.
  • Check internal temperature with a meat thermometer to avoid under- or overcooking.
  • For a lighter version, use unsalted butter and adjust seasoning accordingly.
  • Leftovers can be refrigerated and reheated gently to retain crunchiness.
