Ingredients

Chicken and Seasoning

Filling

  • 1 cup broccoli, steamed and finely diced
  • 1 ¼ cups cheddar cheese, shredded
  • 2 tablespoons Parmesan cheese, grated

Instructions

  1. Prepare the Chicken: If using large chicken breasts, carefully butterfly each breast by slicing it horizontally to open it like a book. Pound the chicken breasts gently between two sheets of plastic wrap until about ¼ inch thick to create an even surface for rolling.
  2. Season the Chicken: Sprinkle both sides of each chicken breast evenly with salt, black pepper, Italian seasoning, garlic powder, and paprika. If desired, lightly dust each breast with flour to help the chicken hold its shape and texture during cooking.
  3. Prepare the Filling: In a bowl, combine the steamed, finely diced broccoli with shredded cheddar cheese and grated Parmesan cheese. Mix well to create a cheesy vegetable filling.
  4. Fill and Roll: Evenly spread the broccoli and cheese mixture over one side of each prepared chicken breast. Starting from one edge, carefully roll up the chicken breast tightly, enclosing the filling inside. Secure the roulades with toothpicks if needed to hold their shape.
