Ingredients

Bread

  • 1 (14 oz) loaf French bread (or Italian bread)

Garlic Butter Mixture

  • 1/4 cup salted butter, softened
  • 2 Tbsp olive oil
  • 2 tsp minced garlic, or 1 tsp granulated garlic
  • Salt and freshly ground black pepper, to taste

Cheeses and Garnish

  • 1 1/4 cups shredded mozzarella cheese
  • 1/3 cup finely shredded parmesan cheese
  • 1 Tbsp finely chopped fresh parsley

Instructions

  1. Preheat and prepare bread: Preheat your oven to 400°F (204°C). Slice the loaf of bread in half lengthwise, ensuring you cut through the height of the bread. Prepare two sheets of aluminum foil, about 24 inches long each, placing them side by side with a slight overlap on a rimmed cookie sheet. Place the bread halves cut side up on the foil-lined baking sheet.
  2. Make garlic butter and coat bread: In a mixing bowl, combine softened butter, olive oil, minced garlic (or granulated garlic), salt, and freshly ground black pepper. Stir well to create a uniform mixture. Spoon and spread this mixture evenly over the cut surface of both bread halves, ensuring edges are well coated to prevent burning. Wrap the foil carefully over the bread, crimping the edges and rolling up the ends to seal.
  3. Bake wrapped bread: Place the wrapped bread in the preheated oven and bake for 10 minutes. This allows the garlic butter to melt into the bread, infusing it with flavor and warming it through.
  4. Add cheese and broil: Remove the bread from the oven and carefully open the foil without removing it completely—roll the foil inward to expose the bread. Evenly sprinkle the shredded mozzarella and parmesan cheeses over both halves. Return to the oven, uncovered, and bake for an additional 5 to 6 minutes. For an extra crispy texture and golden cheese topping, broil the bread for the last 1 to 2 minutes, watching carefully to prevent burning. There is no need to move the oven rack closer to the broiler.
  5. Garnish and serve: Once baked to perfection, remove the bread from the oven. Sprinkle the finely chopped fresh parsley evenly over the top. Cut the cheesy garlic bread into slices and serve warm for the best taste and texture.

Notes

  • Using fresh minced garlic gives a stronger, fresher flavor, but granulated garlic is a convenient alternative.
  • Wrapping the bread in foil during the first bake step keeps it moist while the butter melts in.
  • Broiling at the end creates a crispy, bubbly cheese crust—watch closely to avoid burning.
  • Leftover cheesy garlic bread can be reheated in an oven or toaster oven to maintain crispiness.
  • For a spicy kick, consider adding red pepper flakes into the garlic butter mixture.
