This Cheesy Jalapeño Cashew Dressing is a creamy, tangy, and slightly spicy vegan dressing perfect for salads, wraps, and dipping veggies. Made from raw cashews blended with lime juice, nutritional yeast, and a fresh jalapeño pepper, it offers a delicious dairy-free alternative that is quick to prepare and packed with flavor.

Ingredients

Cashew Base

  • 1 cup raw cashews
  • 3/4 cup water

Flavorings

  • 1/4 cup lime juice (or substitute lemon juice)
  • 2 Tbsp nutritional yeast
  • 1 tsp white miso paste (or chickpea miso for soy-free)
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup
  • 3/4 tsp sea salt
  • 2 cloves garlic, peeled
  • 1 small jalapeño pepper, seeds removed, roughly chopped

Instructions

  1. Blend Ingredients: Add all ingredients to a high-speed blender and blend on high until super smooth and creamy, about 1-2 minutes.
  2. Chill or Use Immediately: Use immediately at room temperature or transfer to a jar and refrigerate for 3-4 hours to allow the dressing to chill and thicken. If it becomes too thick, add a little more water to adjust consistency.
  3. Serve and Store: Enjoy with salads, cauliflower wings, wraps, or as a dip for veggies. Store any leftover dressing covered in the refrigerator for up to 5-7 days.

Notes

  • You can substitute lemon juice for lime juice if preferred.
  • If avoiding soy, replace white miso paste with chickpea miso.
