Ingredients

Pizza Rolls

  • 1 recipe pizza dough (1 pound, 450g)
  • ¼ cup pizza sauce (60ml), plus more for dipping
  • 1½ cups shredded mozzarella cheese (6 ounces/170g)
  • 3 ounces pepperoni slices (about 50 slices)
  • 2 to 3 tablespoons yellow cornmeal

Garlic Butter

  • 3 tablespoons salted butter, melted
  • 1 clove garlic, finely minced

Optional Toppings

  • Freshly grated parmesan cheese
  • Chopped fresh basil

Baking Preparation

  • Olive oil or olive oil spray for greasing
  • Flour for dusting
  • Greased plastic wrap for covering dough

Instructions

  1. Prepare Baking Sheet: Brush a large baking sheet with olive oil or spray with olive oil spray to prevent sticking.
  2. Shape Dough: Generously flour a cutting board and place the pizza dough on it. Sprinkle a little flour on top. Stretch the dough into a rectangular shape approximately 14 inches wide by 10 inches tall, positioning it so one long side is closest to you.
  3. Add Sauce and Toppings: Spread pizza sauce in a thin layer over the dough, leaving a ½-inch border on the far long side. Sprinkle shredded mozzarella cheese evenly over the sauce, then arrange pepperoni slices in a single, slightly overlapping layer.
  4. Roll Dough: Starting with the side nearest you, roll the dough tightly into a log shape, similar to cinnamon rolls. Brush away excess flour from the surface. Using a sharp knife with a gentle back-and-forth motion, slice the log into 12 equal pieces about 1 inch wide.
  5. Prepare for Baking: Place the cornmeal on a small plate. Dip a cut side of each roll into the cornmeal, then place the cornmeal side down on the prepared baking sheet, leaving about 1 inch of space between each roll.
  6. Proof Rolls: Cover the rolls with greased plastic wrap and let them rest for about 20 minutes until puffed.
  7. Preheat Oven: While the rolls proof, preheat your oven to 425°F (220°C).
  8. Bake Rolls: Remove the plastic wrap and bake the pizza rolls for about 15 minutes, or until the tops and sides are golden brown and the cheese inside has melted.
  9. Make Garlic Butter: While the rolls bake, whisk together the melted butter and finely minced garlic in a small bowl.
  10. Brush Rolls and Serve: As soon as the rolls come out of the oven, brush them generously with the garlic butter mixture on the tops and sides. Let them cool slightly, then optionally top with freshly grated parmesan cheese and chopped fresh basil. Serve warm with extra pizza sauce for dipping.

Notes

  • Use a sharp serrated or chef’s knife for clean slices without squashing the rolls.
  • Adjust the quantity of pepperoni or cheese to taste.
  • Allowing the dough to puff slightly before baking helps create a lighter, fluffier roll.
  • You can make the dough ahead of time or use store-bought pizza dough for convenience.
  • For an extra crispy bottom, bake on a preheated pizza stone instead of a baking sheet.
  • These rolls are best enjoyed warm but can be reheated in the oven to refresh crispiness.
