Ingredients

For the Chicken

  • Grilled Sesame Chicken (prepared according to grilled sesame chicken recipe)

For the Salad

  • 4 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • ½ cup diced green onion
  • ¾ cup freshly diced cilantro
  • 1 cup shredded carrots (bagged or cut into matchsticks)
  • 1 red bell pepper, thinly julienned
  • 1 jalapeno, seeded and diced

For the Dressing

  • 1 batch Sesame Ginger Dressing (prepare separately)

For Serving

  • ⅓ cup toasted sliced almonds
  • ⅓ cup roasted cashews halves
  • Sesame seeds, for sprinkling
  • Extra cilantro, for garnish
  • Extra green onion, chopped for garnish
  • A few jalapeño slices
  • Optional: Crispy wonton strips

Instructions

  1. Marinate the Chicken: Prepare the chicken according to the grilled sesame chicken recipe, ensuring it is well marinated to absorb the flavors fully.
  2. Make the Dressing: Prepare one batch of sesame ginger dressing and set it aside for assembling the salad later.
  3. Assemble the Salad: In a large bowl, combine shredded green and red cabbage, diced green onion, freshly diced cilantro, shredded carrots, julienned red bell pepper, and diced jalapeno. Pour the prepared sesame ginger dressing over the salad ingredients and toss thoroughly to coat every vegetable evenly. Cover the bowl and set aside while cooking the chicken.
  4. Cook the Chicken: Grill or bake the marinated chicken according to the grilled sesame chicken recipe instructions until fully cooked and tender.
  5. Serve the Salad: Arrange the dressed salad on a large serving platter. Top with toasted sliced almonds, roasted cashews, extra cilantro, a sprinkle of sesame seeds, additional chopped green onion, and a few jalapeño slices. Optionally, add crispy wonton strips for extra crunch. Serve immediately alongside or topped with the grilled chicken. This salad serves 4 as a main course or 6 as a side dish.

Notes

  • The grilled sesame chicken and sesame ginger dressing should be prepared separately as per their respective recipes.
  • Adjust the amount of jalapeño according to your preferred spice level.
  • For extra crunch, crispy wonton strips are a delicious optional addition.
  • This salad is perfect for meal prep; keep dressing separate until ready to serve to maintain crispness.
  • Feel free to swap nuts based on availability or preferences, but toasting enhances flavor and texture.
