This Chicken Lo Mein recipe offers a flavorful and easy-to-make Asian-inspired stir-fry dish featuring tender chicken, crisp vegetables, and savory noodles tossed in a delicious teriyaki-soy sauce. Perfect for a quick weeknight dinner, this recipe combines fresh ginger, garlic, and sesame oil to enhance the rich sauce and balance the hearty texture of lo mein noodles.

Ingredients

Sauce:

  • 1/2 cup chicken broth
  • 1/2 cup teriyaki sauce
  • 1/4 cup soy sauce
  • 3 tablespoons cornstarch (divided)
  • 1 tablespoon brown sugar
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh ginger
  • 1 teaspoon sesame oil

Main:

  • 2 tablespoons olive oil (divided)
  • 8 oz lo mein noodles
  • 1 lb chicken (cut into bite sized pieces)
  • 2 cups broccoli florets
  • 8 oz sugar snap peas
  • 1 red bell pepper (sliced)

Instructions

  1. Prepare the Sauce: In a small bowl, whisk together the chicken broth, teriyaki sauce, soy sauce, 1 tablespoon cornstarch, brown sugar, minced garlic, minced fresh ginger, and sesame oil until well combined.
  2. Cook the Noodles: Prepare the lo mein noodles according to the package directions, but cook them for one minute less than instructed to avoid overcooking. Drain the noodles and toss them with a bit of olive oil to prevent sticking.
  3. Coat the Chicken: Place the bite-sized chicken pieces and the remaining 2 tablespoons of cornstarch into a large ziplock bag. Seal and shake the bag thoroughly to evenly coat the chicken with cornstarch.
  4. Cook the Chicken: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the coated chicken and cook for about 4 minutes, stirring occasionally, until it turns golden brown and is cooked through. Remove the chicken from the skillet and set aside.
  5. Sauté the Vegetables: Add the remaining 1 tablespoon olive oil to the skillet. Add the broccoli, sugar snap peas, and sliced red bell pepper. Cook for about 5 minutes, stirring occasionally, until the vegetables are crisp-tender.
  6. Thicken the Sauce: Stir the prepared sauce mixture briefly to recombine the ingredients, then pour it into the skillet with the vegetables. Cook together for a couple of minutes until the sauce thickens.
  7. Combine Everything: Return the cooked chicken to the skillet along with the noodles. Stir everything well to evenly coat the chicken and noodles with the thickened sauce.
  8. Serve: Dish out the hot, flavorful Chicken Lo Mein immediately and enjoy.

Notes

  • Cooking the noodles one minute less than package directions ensures they don’t become mushy.
  • Coating chicken with cornstarch before cooking helps create a slightly crispy exterior and thickens the sauce later.
  • You can substitute vegetables with others like carrots, mushrooms, or snap peas depending on preference.
  • Adjust soy sauce and teriyaki sauce amounts to taste if you prefer it saltier or sweeter.
  • Leftover Lo Mein stores well in the fridge for up to 3 days and can be reheated in a skillet or microwave.
