  • 2 cups shredded cheese (cheddar or Monterey jack)
  • 1/3 cup chopped cilantro

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to ensure it’s hot enough when you’re ready to bake the casserole.
  2. Mix the filling: In a large mixing bowl, combine the shredded chicken, sour cream, softened cream cheese, black beans, diced green chiles, corn, and all the spices—chili powder, cumin, smoked paprika, oregano, garlic powder, pepper, and sea salt. Stir everything together until fully incorporated.
  3. Prepare the casserole dish: Lightly spray a 9×9 inch baking pan or casserole dish with oil to prevent sticking. Transfer the chicken mixture into the dish and spread evenly.
  4. Add cheese and bake: Sprinkle the shredded cheese evenly over the top of the mixture. Place the dish in the preheated oven and bake for about 25 minutes. Check at the 20-minute mark to ensure the cheese is melting well. The casserole is done when the cheese is melted, slightly browned, and the chicken mixture is bubbly.
