  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1/2 cup water
  • 15 ounce can chickpeas (or 1 1/2 cups cooked chickpeas or other beans)
  • 1 tablespoon white vinegar
  • 1/2 teaspoon Kashmiri chili powder
  • Chopped cilantro for garnish

Potato Crisps

  • 3 russet potatoes, scrubbed and sliced into thin strips slightly thicker than julienned
  • 2 teaspoons oil
  • 2 teaspoons cornstarch
  • Salt and black pepper to taste

Instructions

  1. Prepare the chili garlic chickpeas: Heat a skillet over medium heat and add the oil. Test the oil temperature by dropping in a few mustard seeds; they should sizzle. Add the mustard seeds and cumin seeds, cooking for 10 to 30 seconds until the mustard seeds pop and cumin seeds darken.
  2. Sauté aromatics: Lower the heat to low. Add the chopped onion, ginger, garlic, sliced green chilies, a pinch of salt, and black pepper. Cook for about 3 minutes until the mixture turns golden and fragrant.
  3. Simmer chickpeas: Add 1/2 cup water, chickpeas, and the remaining salt to the skillet. Stir to combine, cover, and cook for 10 minutes to let the chickpeas absorb the flavors while the liquid mostly evaporates.
  4. Finish chickpeas: Stir in Kashmiri chili powder and white vinegar. Turn off the heat to preserve the fresh tang of the vinegar. Let sit for a few minutes, then adjust seasoning with additional salt or spice as desired. Garnish with chopped cilantro.
  5. Prepare potato strips: Slice potatoes into thin strips. Soak them in cold water to remove starch. Then rinse and drain thoroughly on paper towels to remove excess moisture.
  6. Season potatoes: Place dried potato strips in a bowl and toss with 2 teaspoons oil. In a small bowl, mix salt, pepper, and cornstarch, then sprinkle over the potatoes and toss again to coat evenly.
  7. Cook potato crisps: For air frying, set the air fryer to 370°F (188°C) and cook the potatoes for 8 minutes, stir, then continue cooking for 4 more minutes or until crispy. Alternatively, bake in a preheated oven at 375°F (191°C) for 15 minutes, stir, then bake another 8 to 10 minutes until crisp.
  8. Serve chilled or warm: Combine the chickpeas and potato crisps in bowls, tacos, pitas, or as a snack. Garnish as desired with cilantro and lime juice for extra zest.
