Shrimp and Marinade

  • 1 pound extra large shrimp; raw, deveined, tail-on, and defrosted if frozen

  • ½ teaspoon Kosher salt
  • ½ teaspoon freshly ground black pepper

  • 2 tablespoons butter
  • ¼ cup chopped cilantro (or parsley)

Instructions

  1. Prepare the Shrimp: Rinse the shrimp under cold water and pat dry with paper towels. Ensure they are deveined and tails are on for better presentation.
  2. Marinate: In a medium bowl, combine minced garlic, chopped Calabrian chili peppers, dry oregano, Kosher salt, freshly ground black pepper, lime juice and zest, and dry vermouth. Mix well. Add the shrimp and toss to coat evenly. Let marinate for 10-15 minutes to absorb flavors.
  3. Heat the Pan: Place a large skillet or sauté pan over medium heat. Add the extra virgin olive oil and butter and allow to melt and start to shimmer, indicating the pan is hot enough.
  4. Cook the Shrimp: Add the marinated shrimp to the pan in a single layer. Cook for 2-3 minutes on one side until they turn pink and slightly golden. Flip and cook the other side for an additional 1-2 minutes until fully cooked but still tender.
