Ingredients

Dressing

  • 3 Tablespoons rice vinegar
  • 2 Tablespoons hoisin sauce
  • 2 Tablespoons soy sauce
  • 1 Tablespoon honey
  • 1 Tablespoon ginger paste
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 Tablespoon sesame oil

Salad

  • 4 cups Napa cabbage, shredded
  • 4 cups iceberg lettuce, chopped
  • 1 cup carrots, shredded
  • 2 cups grilled chicken breast, sliced or cubed
  • 11 ounces mandarin oranges, drained
  • 4 green onions, sliced
  • 1/2 cup slivered almonds
  • 2 Tablespoons toasted sesame seeds
  • 1 cup chow mein noodles

Instructions

  1. Make the dressing: Whisk together rice vinegar, hoisin sauce, soy sauce, honey, ginger paste, and minced garlic in a small bowl until smooth and well combined.
  2. Emulsify the oils: While whisking constantly, slowly drizzle in olive oil and sesame oil to create a smooth, emulsified dressing. Set it aside.
  3. Prepare the greens: Wash and thoroughly dry Napa cabbage and iceberg lettuce; then shred and chop them as indicated and add them to a large mixing bowl.
  4. Add carrots: Add the shredded carrots to the bowl with the greens and toss to evenly distribute.
  5. Add chicken: Slice the grilled chicken into bite-sized strips or cubes and add to the salad mixture.
  6. Add fruits and toppings: Stir in the drained mandarin oranges, sliced green onions, slivered almonds, and toasted sesame seeds.
  7. Toss with dressing: Pour the dressing over the salad ingredients and toss everything until the greens are uniformly coated.
  8. Add crunch before serving: Just before serving, top the salad with crunchy chow mein noodles to keep them crisp. Serve and enjoy!

Notes

  • To keep the chow mein noodles crunchy, add them just before serving.
  • Grilled chicken can be prepared ahead and refrigerated for speedy assembly.
  • For a vegetarian version, omit chicken and add tofu or tempeh.
  • This salad stores well but is best eaten within 1-2 days for optimal freshness.
  • Adjust the amount of honey for desired sweetness in the dressing.
