Marinade

Instructions

  1. Make the marinade: In a blender or using an immersion blender, combine the chipotle peppers, adobo sauce, garlic, oil, white vinegar, ancho chili powder, salt, cumin, oregano, and black pepper. Blend until completely smooth to create a rich, spicy marinade.
  2. Marinate the chicken: Place the chicken thighs in a large bowl or a zip-top bag. Pour the prepared marinade over the chicken and toss thoroughly, ensuring every piece is evenly coated. Cover and refrigerate for at least 2 hours and up to 12 hours for the best texture and flavor. Remove from the refrigerator about 30 minutes before cooking to let the chicken come to room temperature.
  3. Grill or sear: Preheat an outdoor grill to high heat (475–500°F) or heat a large cast iron skillet over high heat until very hot. Lightly oil the grill grates or skillet surface. Place the marinated chicken on the grill or pan and cook undisturbed for 4–5 minutes to develop a deeply charred and caramelized crust. Flip and cook for another 4–6 minutes until the internal temperature reaches 170–175°F and the chicken is fully cooked.
  4. Rest and chop: Transfer the cooked chicken to a cutting board and let it rest for 8–10 minutes to allow juices to redistribute. Slice the chicken into strips and then chop into small ½-inch pieces. Sprinkle the chopped chicken evenly with fresh lime juice and toss to coat. Adjust seasoning with additional salt and pepper if desired.
