Perfectly soft and chewy with a slight crunch from sugar coating, these cookies can be customized with your favorite add-ins like peanut butter cups or chocolate chips. A quick 30-minute recipe ideal for any chocolate lover’s baking session.

Ingredients

Main Ingredients

  • 1 boxed chocolate cake mix (15.25 oz.)
  • 2 large eggs
  • 1/2 cup unsalted butter (1 stick), melted
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar (for rolling the cookies)

Optional Add-ins

  • Peanut butter cups
  • Hershey’s Kisses
  • Chocolate chips

Instructions

  1. Preheat and Mix Wet Ingredients: Preheat your oven to 350°F (175°C). In a medium-sized bowl, whisk together the eggs, melted unsalted butter, and vanilla extract until well combined.
  2. Add Cake Mix and Incorporate: Stir in the boxed chocolate cake mix until fully incorporated. Add any optional mix-ins such as chocolate chips or peanut butter cups at this stage.
  3. Chill and Shape Dough: Chill the dough for 15-30 minutes until it is firm enough to roll. Lightly spray your fingers with oil to prevent sticking, then roll the dough into balls and coat each with sugar.
  4. Arrange and Bake: Place the sugar-coated dough balls on a parchment-lined baking sheet. Bake for 9-10 minutes, until the cookies are puffy and slightly crinkly on top, just before they seem fully done. For blossom cookies, gently press a Reese Miniature Peanut Butter Cup or Hershey’s Kiss into the center immediately after baking.
  5. Cool and Decorate: Allow the cookies to cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely. If desired, melt about 1 cup of white chocolate and drizzle over the cooled cookies for decoration. Allow chocolate to set before serving.
  6. Storage: Store cookies in an airtight container at room temperature for up to 5 days to maintain freshness.

Notes

  • Chilling the dough is important to prevent sticking and ensure easier shaping.
  • Rolling cookies in sugar adds a pleasant outer texture and slight sweetness.
  • Use parchment paper to avoid sticking and for easy cleanup.
  • Do not overbake cookies; remove them when they are still puffy and slightly crinkly for optimal texture.
  • Customize with your favorite mix-ins for added flavor and texture variety.
  • Storage in an airtight container preserves freshness but avoid refrigeration to keep cookies soft.
