Ingredients

Chocolate Mixture

  • 227 g (1 cup) Unsalted butter
  • ½ teaspoon Salt
  • 170 g (1 cup) Semi-sweet chocolate chips

Biscuits and Add-Ins

  • 500 g (4 cups) Tea biscuits (e.g., Digestive or Graham crackers), half finely crushed, half crushed or chopped into larger pieces
  • 100 g (1 cup) Candied orange zest (optional)
  • Chopped nuts, such as roasted almonds or pistachios (optional)

Finishing

  • Powdered sugar, for rolling the salamis before serving

Instructions

  1. Prepare biscuits: Crush half of the biscuits into fine crumbs and chop or crush the other half into larger pieces. Set aside these two textures separately.
  2. Make chocolate mixture: In a saucepan over low heat, combine butter, milk, sugar, cocoa powder, and salt. Gently heat while stirring until the sugar dissolves and the mixture is smooth and glossy, being careful not to cook it excessively.
  3. Melt chocolate: Pour the warm butter mixture over the semi-sweet chocolate chips in a heatproof bowl. Let sit for a minute to soften the chocolate, then stir until fully melted and well combined into a homogeneous smooth mixture.
  4. Add biscuit crumbs: Stir in the finely crushed biscuit crumbs thoroughly to thicken the chocolate mixture and create a textured base.
  5. Incorporate biscuit chunks: Gently fold in the larger crushed biscuit pieces to add contrast and create a marbled effect resembling a real salami.
