This Cilantro Lime Grilled Chicken recipe features tender, juicy chicken breasts marinated in a zesty blend of fresh lime juice, garlic, honey, and cilantro. Perfectly grilled to perfection, this dish offers a bright and flavorful twist on classic grilled chicken — ideal for a quick weeknight dinner or a summer barbecue.

Ingredients

Chicken

  • 2 lbs boneless, skinless chicken breasts

Marinade

  • 2 Tbsp olive oil
  • Juice of 3 limes
  • Zest of 1 lime
  • 4 cloves garlic, minced
  • 1 Tbsp honey
  • 3 Tbsp fresh cilantro, chopped (plus more for garnish)
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Prepare the marinade: In a medium bowl, whisk together the lime juice, lime zest, olive oil, minced garlic, chopped cilantro, honey, salt, and black pepper until well combined.
  2. Marinate the chicken: Reserve a small amount of the marinade before adding the chicken. Add the chicken breasts to the bowl with the marinade, cover, and refrigerate for at least 30 minutes, up to 2 hours, allowing the flavors to penetrate the meat.
  3. Preheat the grill: Heat an outdoor grill or grill pan over medium-high heat to get it hot and ready for cooking.
  4. Grill the chicken: Place the marinated chicken breasts on the grill. Brush with the reserved marinade as they cook. Grill the chicken for about 4 to 5 minutes per side, or until the internal temperature reaches 165°F (74°C) and the juices run clear.
  5. Rest and serve: Transfer the grilled chicken to a cutting board and let it rest for 5 minutes to retain its juices. Garnish with extra fresh cilantro and lime wedges before serving. Enjoy!

Notes

  • For best results, use a meat thermometer to ensure the chicken is cooked thoroughly without drying out.
  • You can marinate the chicken up to 2 hours ahead to enhance the flavor.
  • If you don’t have a grill, a grill pan or cast-iron skillet on the stovetop works well as an alternative.
  • Leftover grilled chicken can be stored in the refrigerator for up to 3 days.
  • Serve with rice, tortillas, or a fresh salad for a complete meal.
