This Cinnamon Roll Casserole is a warm, indulgent breakfast bake featuring chopped refrigerated cinnamon rolls soaked in heavy cream and topped with a buttery brown sugar and cinnamon mixture. Baked until golden and drizzled with melted cream cheese icing, it offers a delightful, easy-to-make twist on classic cinnamon rolls perfect for family gatherings or cozy mornings.

Ingredients

Cinnamon Rolls

  • 2 cans Refrigerated Cinnamon rolls with Cream Cheese icing (8 count each, not the Grands)

Wet Ingredients

  • 3/4 cup Heavy Cream
  • 5 Tablespoons Unsalted Butter

Dry Ingredients

  • 1/2 Cup Light Brown Sugar
  • 1 Teaspoon Cinnamon

Instructions

  1. Prepare the Pan and Oven: Spray a 9×13 baking pan with cooking spray to prevent sticking, then preheat your oven to 350°F (175°C).
  2. Cut the Cinnamon Rolls: Using a knife, cut each cinnamon roll into 4 equal pieces to ensure even cooking and layering.
  3. Arrange the Rolls: Spread the cut pieces evenly across the bottom of the prepared baking pan, creating a single layer.
  4. Add Heavy Cream: Pour the 3/4 cup of heavy cream evenly over the cinnamon roll pieces to soak and add richness.
  5. Prepare the Brown Sugar Mixture: In a small bowl, melt the 5 tablespoons of unsalted butter, then stir in the 1/2 cup of light brown sugar and 1 teaspoon of cinnamon until fully combined.
  6. Top the Rolls: Pour this brown sugar and cinnamon butter mixture evenly over the cinnamon rolls to coat them with flavor.
  7. Bake Covered: Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes to allow the rolls to cook through and absorb flavors.
  8. Bake Uncovered: Remove the foil and continue baking for 20-25 minutes more, or until the top turns golden brown and slightly caramelized.
  9. Finish with Icing: Once baked, melt the cream cheese icing from the cinnamon rolls in the microwave for a few seconds until pourable, then drizzle evenly over the hot casserole.

Notes

  • Use standard-sized cinnamon rolls, not the larger Grands variety, for the best texture and baking time.
  • Covering the dish during the initial baking prevents the rolls from drying out and ensures even cooking.
  • Warming the icing makes it easier to drizzle and spreads evenly for that signature creamy finish.
  • This casserole can be prepared ahead of time and refrigerated before baking; add extra baking time if baking from cold.
