Instructions

  1. Combine ingredients: In a small saucepan, add 1 cup of water and a 3-inch cinnamon stick.
  2. Simmer: Cover the saucepan and bring the mixture to a hearty simmer over medium heat.
  3. Gently simmer: Reduce the heat to low, keep the pan covered, and gently simmer for 10 minutes to extract full cinnamon flavor.
  4. Steep: Remove the saucepan from heat but keep the cinnamon stick in the water. Let it steep, covered, for an additional 10 minutes.
  5. Strain and serve: Pour the mixture through a mesh strainer into your mug, removing the cinnamon stick. Add creamer or sweetener if desired. Enjoy warm, or chill for up to 4 days and serve cold or reheated.

Notes

  • Use Ceylon cinnamon if possible for a milder, sweeter flavor and lower coumarin levels.
  • Adjust steeping time for a stronger or milder cinnamon taste.
