  • 8.5 to 9 ounces cherry tomatoes on vine, halved
  • 1 cup sliced English cucumber (about 20 thin slices)
  • ½ green bell pepper, sliced (about 1 cup)
  • medium red onion, thinly sliced (about 1/3 cup)
  • ½ cup pitted kalamata olives
  • ½ cup feta cheese, diced or thick-sliced

Dressing Ingredients

  • ½ cup extra-virgin olive oil
  • ¼ cup red wine vinegar
  • ½ teaspoon dry oregano
  • ¼ teaspoon sea salt
  • ¼ teaspoon black pepper

Instructions

  1. Prepare the dressing: Place the extra-virgin olive oil, red wine vinegar, dry oregano, sea salt, and black pepper into a jar with a tight-fitting lid. Shake vigorously until well combined. Alternatively, whisk the ingredients together in a bowl until emulsified.
  2. Assemble the salad: In a large bowl, combine the halved cherry tomatoes, sliced cucumber, green bell pepper, red onion, and pitted kalamata olives.
  3. Toss with dressing: Pour the freshly made dressing over the salad ingredients. Toss gently to coat all the vegetables evenly with the dressing.
