These Cottage Cheese Bagels are a quick and delicious homemade alternative to traditional bagels. Made with simple ingredients like full-fat cottage cheese, flour, and baking powder, this recipe yields soft, flavorful bagels without the need for yeast or boiling. You can cook them either in an air fryer or oven, making them perfect for a convenient breakfast or snack topped with your favorite seasonings such as Everything Bagel seasoning.

Ingredients

Bagel Dough

  • 1 cup full-fat Good Culture Cottage Cheese
  • 1 cup all-purpose flour (or whole wheat flour or gluten-free all-purpose flour)
  • 1 ½ teaspoons baking powder
  • 1 egg (whisked, for egg wash)

Toppings

  • Everything Bagel Seasoning (to taste)
  • Optional: sesame seeds or poppy seeds

Instructions

  1. Blend: Add the full-fat cottage cheese to a blender or food processor and blend until completely smooth and creamy. This will ensure your dough is smooth and easy to handle.
  2. Mix Dry Ingredients: In a medium bowl, whisk together the flour and baking powder until evenly combined, forming the dry base of your dough.
  3. Form Dough: Add the blended cottage cheese to the flour mixture and stir until a shaggy dough forms. Transfer this dough to a lightly floured surface and knead gently for 1 to 2 minutes until the dough is smooth, cohesive, and soft but not sticky. Add flour sparingly if needed.
  4. Shape Bagels: Divide the dough into 4 equal pieces. Roll each piece into a rope shape and then connect the ends to create a bagel shape. Make the center hole slightly larger than desired, as it will shrink during cooking.
  5. Apply Egg Wash and Add Toppings: Brush the tops of the bagels with the whisked egg to help toppings adhere and create a golden crust. Sprinkle with Everything Bagel seasoning or your choice of sesame or poppy seeds.
  6. Air Fry (Primary Method): Place the bagels in a single layer in your air fryer basket. Air fry at 325°F (163°C) for about 15 minutes or until the bagels are golden brown and cooked through.
  7. Alternative Oven Bake: Alternatively, place the bagels on a parchment-lined baking sheet. Bake in a preheated oven at 375°F (190°C) for about 25 minutes until golden and cooked through.
  8. Cool: Let the bagels cool for at least 15 minutes before slicing to prevent a doughy texture. Toast if desired and enjoy!

Notes

  • Blending the cottage cheese until smooth is essential for a soft and smooth dough.
  • Knead the dough lightly and only until smooth to avoid tough bagels.
  • The bagel center hole should be larger than usual since it will shrink during cooking.
  • If your dough is sticky, add a small amount of flour, but avoid adding too much to keep the bagels tender.
  • Letting the bagels cool fully before slicing prevents a gummy interior.
  • You can customize toppings according to your preference—everything seasoning, sesame seeds, or poppy seeds all work well.
  • This recipe allows cooking via air fryer or oven; air frying is faster and yields a slightly crispier crust.
