A quick and versatile cottage cheese toast recipe featuring both sweet and savory topping options. This easy-to-make dish uses toasted sourdough bread as a base, topped with creamy cottage cheese and various flavorful additions like avocado, smoked salmon, fresh fruits, and nuts, making it perfect for breakfast, brunch, or a light snack.

Ingredients

Base

  • 1 slice sourdough bread (or crusty bread of choice)
  • 1 Tablespoon unsalted butter (melted)
  • 1/2 cup cottage cheese (whole milk, 2%, or fat free)

Savory Toppings

  • 1/2 avocado (peeled and thinly sliced)
  • 1/4 cup sliced cherry tomatoes
  • 1-2 Tablespoons hot honey (or chili crunch)
  • 1 hard boiled egg (sliced or grated)
  • 1 Tablespoon everything bagel seasoning
  • Chili crunch (or hot honey, to taste)
  • 1-2 ounces smoked salmon
  • Red onion (thinly sliced, or pickled red onion to taste)
  • 1 Tablespoon capers
  • Fresh dill (to taste)

Sweet Toppings

  • 1-2 Tablespoons creamy peanut butter
  • 1/2 banana (sliced)
  • Honey and cinnamon (to taste)
  • 1 Tablespoon strawberry jam
  • 2-3 fresh strawberries (sliced)
  • 2 teaspoons chia seeds
  • 1-2 Tablespoons creamy almond butter
  • 1/4 cup fresh berries (like raspberries or blueberries)
  • Honey (to taste)

Instructions

  1. Preheat & Toast Bread: Preheat your oven to broil. Using a pastry brush, evenly brush the melted butter over one side of the bread. Place the bread on a baking sheet and toast it under the broiler for 4-6 minutes, or until it turns golden brown. Alternatively, you may toast the bread in a skillet over medium heat or simply use a toaster.
  2. Cool the Toast: Remove the toast from heat and let it cool slightly to avoid melting the cottage cheese on contact.
  3. Add Cottage Cheese: Spread 1/2 cup of cottage cheese evenly over the toasted bread as the creamy base layer.
  4. Choose and Add Toppings: Customize your toast by adding your choice of toppings. For savory flavor, try avocado slices, cherry tomatoes, hot honey or chili crunch, hard boiled egg, everything bagel seasoning, smoked salmon, red onions, capers, and fresh dill. For a sweet twist, spread peanut butter or almond butter, add sliced banana, honey and cinnamon, strawberry jam, fresh strawberries or other berries, and sprinkle with chia seeds.
  5. Serve and Enjoy: Once topped, serve immediately and enjoy your delicious cottage cheese toast warm or at room temperature.

Notes

  • This recipe is highly customizable; you can mix and match toppings based on your preference and dietary needs.
  • Using whole milk or 2% cottage cheese offers creaminess, while fat-free options reduce calories.
  • Broiling is the quickest method to get a crispy toast, but using a skillet or toaster works fine as alternatives.
  • Leftover toast can be refrigerated and eaten cold but is best enjoyed fresh.
  • Hot honey or chili crunch add a nice spicy-sweet kick to savory options.
