Ingredients

Dip Ingredients

  • 10 ounces chopped frozen spinach
  • 6 ounces cream cheese, softened
  • ¼ cup mayonnaise
  • ¼ cup sour cream
  • ⅓ cup freshly grated Parmesan cheese
  • 4 ounces Monterey Jack cheese (about 1 cup grated)
  • 2 teaspoons fresh minced garlic
  • 1 tablespoon dried minced onion flakes
  • ⅛ teaspoon crushed red pepper flakes
  • ⅛ teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a small baking dish to prevent sticking.
  2. Prepare Spinach: Steam the frozen chopped spinach in the microwave following the package directions until thawed and tender. Drain any excess liquid thoroughly to avoid a watery dip.
  3. Mix Ingredients: In a mixing bowl, combine the softened cream cheese, mayonnaise, sour cream, Parmesan, Monterey Jack cheese, minced garlic, dried onion flakes, crushed red pepper flakes, black pepper, and the drained spinach. Use a rubber spatula to stir everything until the mixture is fully blended and smooth.
  4. Bake the Dip: Transfer the spinach and cheese mixture into the greased baking dish and spread evenly. Bake uncovered in the preheated oven for 10 minutes until the dip is heated through and bubbly.
  5. Serve Warm: Remove the dip from the oven and give it a good stir. Optionally, sprinkle extra crushed red pepper flakes on top for garnish. Serve immediately with your choice of fresh vegetables, tortilla chips, crostini, or crackers.

Notes

  • Ensure to drain the spinach very well after steaming to prevent the dip from becoming watery.
  • Use freshly grated Parmesan cheese for the best melting consistency and flavor.
  • The dip can be prepared ahead of time and refrigerated; bake just before serving.
  • For a milder flavor, reduce or omit the crushed red pepper flakes.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the oven.
