Ingredients

Chicken

  • 4 chicken breasts
  • 1/2 tsp paprika
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp crushed red pepper
  • 1/2 tsp sea salt
  • 1/2 tsp black pepper

Vegetables

  • 1/2 cup sun-dried tomatoes (drained of oil, chopped)
  • 10 oz white mushrooms (sliced)
  • 1 cup fresh baby spinach (chopped)

Sauce

  • 3/4 cup heavy cream
  • 1/2 cup chicken broth
  • 2 oz cream cheese (softened)
  • 1 tablespoon cornstarch
  • 2-3 tsp garlic cloves (minced)
  • Salt and pepper (to taste)
  • 1/3 cup grated Parmesan cheese

Instructions

  1. Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it is hot and ready for baking the chicken evenly.
  2. Prepare Chicken: Place the chicken breasts in a plastic bag or cover them with plastic wrap. Use a rolling pin to pound the chicken to an even thickness for uniform cooking. Transfer the chicken to an oil-sprayed 9×13 inch baking pan.
  3. Season Chicken and Add Vegetables: Season the chicken breasts with salt, pepper, garlic powder, Italian seasoning, crushed red pepper, and paprika. Arrange sliced mushrooms and chopped sun-dried tomatoes around the chicken in the baking pan.
  4. Make the Cream Sauce: In a small bowl, whisk together the chicken broth and cornstarch until the cornstarch dissolves completely. Add the heavy cream, softened cream cheese, minced garlic, salt, and pepper. Whisk until the mixture is smooth. Stir in the grated Parmesan cheese, then pour this creamy mixture evenly over the chicken, mushrooms, and tomatoes.
  5. Bake the Chicken: Place the baking pan in the preheated oven and bake for 17-20 minutes, or until the chicken reaches an internal temperature of about 162-163°F. This ensures the chicken is cooked but remains juicy.
  6. Add Spinach and Rest: After removing the chicken from the oven, stir the chopped spinach into the warm cream sauce to allow it to wilt gently. Let the chicken rest a few minutes so it reaches the perfect eating temperature and the flavors meld.
  7. Serve: Serve the creamy Tuscan chicken over pasta, rice, or alongside your favorite vegetables. Store any leftovers in an airtight container and refrigerate for up to 4 days.

Notes

  • Ensure chicken breasts are pounded to even thickness to avoid undercooked spots.
  • Use freshly grated Parmesan for best flavor.
  • If you prefer less heat, reduce or omit crushed red pepper flakes.
  • For a lower fat version, substitute heavy cream with half-and-half and use less cream cheese.
  • Check chicken temperature with a meat thermometer to prevent overcooking.
  • The sauce can be thickened further by simmering longer if desired.
