Ingredients

Vegetables

  • 2 English cucumbers, thinly sliced
  • ½ red onion, thinly sliced
  • 2 green onions, thinly sliced
  • 2 tablespoons roughly chopped fresh dill

Salting

  • 1 tablespoon kosher salt

Dressing

  • ½ cup sour cream (or plain Greek yogurt)
  • 1 ½ tablespoons white wine vinegar (or lemon juice)
  • 1 garlic clove, minced
  • Ground black pepper, to taste

Instructions

  1. Salt the cucumbers: Place the thinly sliced cucumbers into a colander and toss them with the kosher salt. Set the colander in the sink or over a plate to allow the salt to draw out excess moisture from the cucumbers. Let this sit for 20 minutes.
  2. Wash and drain: Rinse the cucumbers thoroughly under cold water to remove most of the salt. Drain well to remove excess water.
  3. Add ingredients to a bowl: Transfer the drained cucumbers to a mixing bowl and add the thinly sliced red onion, green onions, and roughly chopped dill. Mix gently to combine.
  4. Make the creamy dressing: In a small bowl, whisk together the sour cream (or Greek yogurt), white wine vinegar (or lemon juice), minced garlic, and ground black pepper until smooth and creamy.
  5. Stir together: Pour the creamy dressing over the cucumber mixture and toss everything together gently until all ingredients are evenly coated with the dressing. Serve chilled or at room temperature.
