This creamy healthy oatmeal with maple bananas is a comforting and nutritious breakfast option that combines the natural sweetness of caramelized bananas with the hearty texture of rolled oats. Cooked gently on the stovetop until tender and creamy, then topped with buttery maple-glazed bananas, this dish is both satisfying and wholesome, perfect for a cozy morning meal.

Ingredients

Oatmeal

  • 2 cups rolled oats
  • 4 cups water
  • ¼ tsp salt
  • 1 tbsp butter

Maple Bananas

  • 1 tbsp butter
  • 3 tbsp maple syrup
  • 3 large bananas, sliced into ½ inch (2 cm) slices
  • Pinch of salt

Instructions

  1. Cook the Oats: Combine the rolled oats, water, and salt in a saucepan over medium-high heat. Bring the mixture to a boil, then reduce the heat and simmer gently for 10-15 minutes until the oats are almost fully cooked and most of the water has been absorbed. If the water evaporates too quickly, add an additional half cup of water to prevent burning.
  2. Steam the Oats: Remove the saucepan from the heat and stir in 1 tablespoon of butter. Cover the pan and let the oats steam for 10 minutes to achieve a creamy texture.
  3. Prepare the Maple Syrup Mixture: In a separate pan, melt 1 tablespoon of butter over medium heat. Add the maple syrup and bring the mixture to a gentle boil, allowing it to thicken slightly.
  4. Caramelize the Bananas: Add the banana slices to the boiling maple syrup mixture. Let them cook and caramelize for about 5 minutes, turning gently to coat all sides. Season with a pinch of salt, then remove from heat once caramelized and soft.
  5. Serve: Spoon the creamy oatmeal into bowls and top generously with the warm, maple-glazed bananas for a deliciously sweet and comforting breakfast.

Notes

  • You can adjust the sweetness by adding more or less maple syrup as desired.
  • For a vegan version, substitute the butter with coconut oil or a plant-based margarine.
  • Adding a sprinkle of cinnamon or nuts on top can enhance flavor and texture.
  • If you prefer a thinner oatmeal consistency, add more water while cooking.
  • This recipe can be doubled easily to serve a larger group.
