Creamy Ranch Chicken is a comforting skillet dish featuring tender chicken breasts seared to golden perfection and simmered in a rich, creamy ranch sauce made with cream of chicken soup, sour cream, and flavorful seasonings. Ready in just 30 minutes, it’s a perfect 4-serving meal for busy weeknights that pairs wonderfully with baked potatoes or steamed vegetables.

Ingredients

Chicken

  • 2 large boneless, skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons butter, melted
  • 1-2 tablespoons olive oil

Sauce

  • 10.5 oz. cream of chicken soup (one standard can)
  • 1 ½ cups milk
  • 1 cup sour cream, at room temperature
  • ½ teaspoon onion powder
  • 1 oz. packet Ranch seasoning mix

Instructions

  1. Slice and Prepare Chicken: Slice each chicken breast into 2-3 thinner pieces, aiming for about ½ inch thickness. If needed, gently pound the pieces with a meat tenderizer to even thickness for faster and more even cooking.
  2. Season the Chicken: Pat the chicken pieces completely dry with paper towels. Sprinkle both sides evenly with Italian seasoning, salt, and pepper. Brush one side of each piece with the melted butter, ensuring the butter is not too hot to avoid cooking the chicken prematurely.
  3. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Carefully place the chicken pieces in the pan in batches to avoid overcrowding. Sear each side for 4-5 minutes until a golden brown crust forms. Remove the chicken and set it aside on a plate.
  4. Prepare the Sauce: In the same skillet over medium heat, add the cream of chicken soup, milk, sour cream, onion powder, and ranch seasoning mix. Stir well to combine all ingredients. Allow the mixture to gently bubble and reduce slightly for about 5 minutes, stirring occasionally.
  5. Simmer the Chicken in Sauce: Return the seared chicken to the skillet, nestling the pieces into the sauce. Spoon some sauce on top of the chicken. Cover the skillet partially with a lid and let the chicken simmer over low to medium heat for about 10 minutes. This allows the chicken to heat through fully and absorb the flavors of the sauce.
  6. Serve: Serve the creamy ranch chicken hot, spooning additional sauce over the chicken. It pairs beautifully with baked potatoes, with the sauce drizzled over the potatoes for an extra comforting meal.

Notes

  • Ensure chicken pieces are evenly sized for consistent cooking.
  • Don’t overheat the melted butter before brushing, as it may cook the chicken prematurely.
  • Searing in batches prevents overcrowding and promotes a golden crust.
  • Use full-fat sour cream for a richer sauce, but low-fat works as a lighter option.
  • The sauce thickens as it simmers; adjust milk slightly if you prefer a thinner consistency.
  • Try serving with steamed vegetables or a fresh salad for a balanced meal.
