Masala Chai is a flavorful and aromatic Indian spiced tea made by brewing black tea with a blend of whole spices, fresh ginger, milk, and sugar. This comforting beverage is perfect for tea lovers looking to enjoy a warm, spiced drink that balances bold tea flavors with the warmth of cloves, cinnamon, cardamom, and peppercorns.

Ingredients

Spices

  • 3 whole cloves
  • 1 small cinnamon stick
  • 3 green cardamom pods
  • 2 black peppercorns

Tea and Liquids

  • 3 black tea bags
  • 1 ½ cups water
  • 1 cup full-fat milk
  • 1 small piece of fresh ginger (about ½” piece)

Sweetener

  • 2 teaspoons sugar (optional)

Instructions

  1. Prepare the Spices: Slightly crush the cloves, cinnamon stick, cardamom pods, and peppercorns using a mortar and pestle or the back of a spoon to help release their flavors.
  2. Boil Water with Spices and Ginger: In a small saucepan, add 1 ½ cups of water, the crushed spices, and the piece of fresh ginger. Bring to a boil over medium heat to infuse the water with the spice flavors.
  3. Add Tea Bags: Once the water is boiling, add the 3 black tea bags and reduce the heat to low. Simmer gently for 3-4 minutes to brew the tea and allow the flavors to meld.
  4. Add Milk and Sweetener: Pour in 1 cup of full-fat milk and 2 teaspoons of sugar (if using). Increase heat to medium and bring the mixture back to a gentle boil while stirring to dissolve the sugar.
  5. Simmer and Strain: Reduce heat to low and let the chai simmer for another 2-3 minutes until it develops a rich color and texture. Remove from heat and strain the tea through a fine sieve into cups, discarding the solids.
  6. Serve: Serve hot in small cups and enjoy the warm, aromatic flavors of your homemade Masala Chai.

Notes

  • You can adjust the amount of sugar or omit it entirely based on your preference for sweetness.
  • For a stronger chai, brew the tea and spices longer before adding milk.
  • Fresh ginger gives the best flavor, but powdered ginger can be used in a pinch.
  • Full-fat milk provides creaminess, but you can use any milk alternative if desired.
  • Leftover chai can be refrigerated and reheated gently on the stove.
