Crispy Baked Haddock is a quick and delicious recipe featuring tender haddock fillets coated with a flavorful panko, Parmesan, and Italian seasoning crust. Baked to perfection and finished under the broiler for a golden, crunchy topping, this dish is perfect for a healthy weeknight dinner.

Ingredients

Fish and Seasoning

  • 1 pound haddock fillets
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground black pepper

Breadcrumb Coating

  • 1/2 cup panko breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning

Other

  • 1/4 cup melted butter
  • 1 lemon (sliced)

Instructions

  1. Preheat Oven. Set your oven to 450°F (232°C) to get it hot and ready for baking the haddock.
  2. Prepare Fish. Place the haddock fillets on a clean surface and pat them dry with paper towels. Season both sides evenly with kosher salt and ground black pepper to enhance flavor.
  3. Mix Coating. In a small bowl, combine the panko breadcrumbs, grated Parmesan cheese, and Italian seasoning thoroughly to create the crispy topping mixture.
  4. Butter Fish and Dish. Using a brush, apply the melted butter evenly on both sides of each fish fillet. Additionally, brush the remaining melted butter inside the baking dish to prevent sticking and add flavor.
  5. Apply Breadcrumb Mix. Generously sprinkle the panko mixture over both sides of the buttered fillets, pressing lightly to ensure it adheres well.
  6. Bake the Haddock. Place the prepared fillets in the baking dish and bake in the preheated oven for 7 minutes.
  7. Broil for Crispiness. After baking, switch the oven setting to broil. Broil the fish for 1 to 2 minutes until the panko coating turns golden brown and the fish flakes easily with a fork. Watch carefully to avoid burning.
  8. Finish and Serve. Remove from oven, squeeze fresh lemon juice over the fillets for bright acidity, and serve immediately while hot and crispy.

Notes

  • Make sure to pat the fish dry before seasoning to help the coating stick better.
  • Watch closely during broiling as the breadcrumbs can burn quickly.
  • Serve with lemon wedges on the side for extra flavor.
  • For a lower fat option, use olive oil instead of butter.
  • This recipe works well with cod or pollock as alternatives to haddock.
