Ingredients

Potatoes

  • 1.5 Pounds Baby Potatoes (red potatoes, gold potatoes, or your favorites)

Seasonings and Toppings

  • 3 Tablespoons extra virgin olive oil (or avocado oil, vegetable oil, canola oil, or melted butter)
  • ½ Teaspoon Sea Salt (Any thick flake salt)
  • ½ Cup Parmesan, finely grated
  • ½ Teaspoon Garlic Powder
  • ¼ Teaspoon Salt
  • ¼ Teaspoon Black Pepper
  • 1 Tablespoon Sliced Green Onions (or chives, rosemary, thyme, basil)

Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 400°F (200°C). Lightly coat a 9×13 inch baking dish with 2 tablespoons of olive oil to prevent sticking and help develop the crispy crust.
  2. Mix Parmesan Topping: In a small bowl, combine the finely grated parmesan, garlic powder, ¼ teaspoon salt, and ¼ teaspoon black pepper to create a flavorful topping mix.
  3. Spread Topping: Use a spoon to evenly sprinkle and spread the parmesan mixture across the bottom of the prepared baking dish to create a base layer.
  4. Prepare Potatoes: Slice the baby potatoes in half. Optionally, score the cut side across the center to increase crispiness. Place the potatoes cut side down directly onto the parmesan topping in the baking dish.
  5. Oil and Season Potatoes: Brush the potato cut sides with the remaining 1 tablespoon of olive oil and sprinkle with ½ teaspoon sea salt to enhance flavor and promote crispiness.
  6. Roast Potatoes: Bake in the preheated oven for 30 minutes, or until the parmesan topping is golden brown and crisp, and the potatoes are tender inside.
  7. Rest and Serve: Remove the potatoes from the oven and let them rest for five minutes. Carefully separate the potatoes using a metal spatula, transfer to a serving platter, and garnish with sliced green onions or your choice of herbs before serving.
