A quick and easy recipe perfect for any meal occasion.

Ingredients

For the Potatoes:

  • 1 ½ pounds baby gold potatoes, halved lengthwise
  • 1 tablespoon salted butter, melted
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • 1 teaspoon kosher salt
  • Freshly ground black pepper, to taste

For the Pan:

  • 2 tablespoons salted butter, melted
  • ½ cup (2 ounces) pre-grated store-bought Parmesan cheese (from the refrigerated section)

For Serving:

  • Roasted garlic whipped feta dip, optional but recommended
  • 1 lemon, zested
  • 1 to 2 tablespoons finely chopped fresh parsley
  • 1 to 2 tablespoons finely chopped fresh dill
  • Flakey sea salt, for sprinkling (such as Maldon)

Instructions

  1. Preheat Oven: Preheat the oven to 400 degrees F to prepare for roasting the potatoes.
  2. Prepare Potatoes: In a large bowl, add the halved baby gold potatoes, then pour over 1 tablespoon melted salted butter, garlic powder, dried oregano, kosher salt, and freshly ground black pepper. Gently toss the potatoes with tongs or clean hands until they are evenly coated with the butter and spices.
  3. Prepare Baking Dish: In a 9×13 inch glass baking dish (glass preferred for even browning), brush the bottom evenly with 2 tablespoons melted salted butter. Sprinkle the ½ cup pre-grated Parmesan cheese evenly over the buttered bottom; do not spread it, just sprinkle.
  4. Arrange Potatoes: Place the seasoned potatoes cut-side down firmly onto the Parmesan layer in a single layer, ensuring good contact for maximum crispness.
  5. Roast Potatoes: Roast the potatoes uncovered in the preheated oven for 35 to 40 minutes, until the potatoes are fork-tender and the Parmesan cheese is golden brown and crispy.
  6. Serve: If using, spread about 1 cup of roasted garlic whipped feta dip on the bottom of a serving platter. Use a flexible turner to carefully scoop and flip the potatoes upside down onto the dip, creating a flavorful base. Garnish immediately with lemon zest, freshly chopped parsley, fresh dill, and a sprinkle of flaky sea salt. Serve remaining feta dip on the side for dipping. Alternatively, serve potatoes immediately with your favorite sauce or dip.

Notes

  • Using pre-grated store-bought Parmesan cheese is key to achieving the perfect crispiness and browning.
  • Glass baking dishes work best for even heat distribution and easier monitoring of potato crispiness.
  • Feel free to swap butter with olive oil for a dairy-free option but the flavor will differ slightly.
  • The roasted garlic whipped feta dip adds a wonderful creamy and tangy contrast, but you can use any dip of your choice.
  • Adjust herbs and seasoning to your preference for more or less garlic, oregano, or fresh herbs.
