Ingredients

Meat & Seasoning

  • 1 Pound ground turkey
  • ½ onion (yellow or white, diced)
  • 1 Package taco seasoning

Beans & Cheese

  • ½ Cup refried beans
  • 1 Cup cheese (shredded, any preferred type like cheddar or Monterey Jack)

Tortillas & Oil

  • 10 corn tortillas (soft)
  • 1 Tablespoon vegetable oil (for frying, may need more)

  • Lettuce (shredded)
  • Tomatoes (diced)
  • Lime juice (fresh)
  • Cilantro (fresh)
  • Sour cream
  • Avocado (sliced)
  • Hot sauce

Instructions

  1. Cook the Turkey: Add the ground turkey and diced onion to a large skillet over medium-high heat. Cook, stirring frequently, until the turkey is browned and the onions are softened, about 5 minutes.
  2. Simmer with Seasoning: Add the taco seasoning according to the package directions. Reduce the heat and let the mixture simmer for 10 minutes to develop flavors.
  3. Assemble the Tacos: Spread a tablespoon of refried beans on half of each corn tortilla. On the other half, add a heaping spoonful of the seasoned turkey mixture and sprinkle with shredded cheese. Do not fold the tortilla yet to avoid cracking.
  4. Soften the Tortillas: Heat a large skillet over medium heat and add enough vegetable oil to coat the bottom. Once hot, place each prepared tortilla flat in the skillet. Cook for about 30 seconds until the tortilla becomes pliable.
  5. Fold and Fry: Using tongs, carefully fold the tortilla in half. Continue cooking for 2 to 4 minutes on each side until the tacos are golden brown and crispy. Remove from the pan and drain on paper towels. Repeat with remaining tortillas, adding oil as needed.
  6. Stuff the Tacos: While still warm, carefully open each taco and add optional fillings such as shredded lettuce, diced tomatoes, fresh cilantro, sliced avocado, a squeeze of lime juice, sour cream, and hot sauce as desired.
  7. Oven Version: Preheat your oven to 425°F (220°C). Warm the corn tortillas in the microwave or over an open flame to make them pliable. Assemble the tacos as described, folding them in half. Place them on a parchment-lined baking sheet and bake for 5 to 8 minutes. Flip and bake for an additional 5 minutes until golden and crispy.
  8. Air Fryer Version: Preheat the air fryer to 400°F (200°C). Warm the tortillas to make them pliable. Spread refried beans over each tortilla completely, then add the turkey mixture and cheese. Instead of folding, roll the tacos and place seam side down in the air fryer basket. Cook for 8 to 12 minutes or until crispy.
