These Crock Pot French Dip Sandwiches feature tender, slow-cooked beef chuck roast infused with savory seasonings and rich broth, served on toasted French rolls with melted provolone cheese. Perfect for a comforting, hands-off meal with flavorful au jus for dipping.

Ingredients

Beef and Broth

  • 3 lb beef chuck roast (trimmed of excess fat)
  • 1 tablespoon vegetable oil
  • 1/3 cup reduced sodium soy sauce
  • 1 cup Coke (NOT diet)
  • 2 10.5 oz. cans beef consommé
  • 1/4 cup dried minced onions
  • 1 tablespoon beef bouillon
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon dried thyme
  • 1 bay leaf

Sandwich Assembly

  • 6 French rolls or hoagie buns
  • 12 slices provolone cheese

Instructions

  1. Sear the Roast: Heat vegetable oil over medium-high heat in a cast iron skillet. Using two forks or tongs to hold the roast, sear it on all sides until lightly browned. This step locks in the flavors and improves texture.
  2. Prepare Slow Cooker: Transfer the seared roast to the slow cooker. Add the soy sauce, Coke, beef consommé, dried minced onions, beef bouillon, garlic powder, onion powder, oregano, salt, pepper, thyme, and bay leaf over the roast.
  3. Cook the Roast: Cook on LOW for 4 hours. After 4 hours, remove the roast to a cutting board and thinly slice it across the grain. Return the sliced meat to the slow cooker and continue cooking on LOW for an additional 1–2 hours to enhance tenderness and flavor.
  4. Prepare Au Jus: When ready to serve, remove the roast and strain fat from the broth to create a flavorful au jus for dipping the sandwiches.
  5. Assemble and Bake Sandwiches: Split the French rolls and place the bottoms on a baking tray. Top each with sliced beef followed by 2 slices of provolone cheese. Bake in a preheated oven at 350°F (175°C) until the cheese is melted and bubbly, about 5–7 minutes.
  6. Serve: Serve the sandwiches hot with the reserved au jus for dipping and enjoy this comforting, slow-cooked classic.

Notes

  • Trimming excess fat from the roast helps reduce greasiness in the au jus.
  • Non-diet Coke adds sweetness and helps tenderize the beef.
  • Beef consommé enhances the depth of flavor.
  • You can substitute provolone with mozzarella or Swiss cheese if preferred.
  • For a crispier sandwich, toast the rolls briefly before adding meat and cheese.
