Crostini with Balsamic Strawberries and Ricotta is a delightful and elegant appetizer featuring toasted baguette slices topped with creamy ricotta cheese and a sweet-tart mixture of strawberries reduced in balsamic vinegar. This quick and easy recipe is perfect for entertaining or a light snack, combining fresh fruit, tangy balsamic reduction, and creamy cheese for a burst of flavors in every bite.

Ingredients

Strawberry Mixture

  • ½ cup strawberries, chopped
  • ¼ cup balsamic vinegar (divided)
  • 1 tsp lemon zest
  • 2 tsp brown sugar

Toppings and Bread

  • 5 tbsp ricotta cheese
  • ½ baguette

Instructions

  1. Prepare the toasts: Slice the baguette into 12 half-inch slices. Arrange the slices on a baking sheet and toast them in the oven at 350°F for about 5 minutes, or until they are nicely toasted and slightly golden.
  2. Chop the strawberries: While the toasts are baking, finely chop the strawberries until you have ½ cup. If the strawberries are very juicy, place them on a paper towel briefly to absorb excess moisture to prevent watering down the balsamic sauce.
  3. Make the balsamic reduction: In a small saucepan, combine 4 tablespoons of balsamic vinegar with 2 teaspoons of brown sugar. Heat the mixture over medium heat, stirring occasionally, and let it reduce for 6 to 8 minutes until it thickens into a saucy consistency.
  4. Prepare lemon zest: While the sauce reduces, zest 1 teaspoon of lemon from fresh lemon peel and set aside.
  5. Combine strawberries and sauce: Mix the chopped strawberries with the lemon zest. Pour the balsamic reduction into a measuring cup or bowl and gently fold it into the strawberry mixture, coating them evenly.
  6. Assemble the crostini: Spread approximately a teaspoon of ricotta cheese on each toasted baguette slice. Then, carefully top each with a spoonful of the balsamic strawberry mixture. Serve immediately for best texture and flavor.

Notes

  • Use ripe but firm strawberries to avoid excessive juice that can dilute the balsamic reduction.
  • You can prepare the balsamic reduction in advance and store it refrigerated for up to 3 days.
  • For a sweeter variation, add a drizzle of honey on top of the assembled crostini before serving.
  • This recipe serves 12 appetizers, perfect for parties or gatherings.
