This classic Dad’s Vanilla Ice Cream recipe delivers a rich, creamy homemade vanilla ice cream made from scratch using simple ingredients. The custard base is gently cooked on the stovetop, chilled, and churned for a smooth, velvety texture that’s perfect for any occasion.

Ingredients

Ice Cream Base

  • 1 cup granulated sugar
  • 2 large eggs
  • ½ teaspoon fine sea salt
  • 2 cups whole milk
  • 1 pint heavy whipping cream
  • 2 teaspoons vanilla extract

Instructions

  1. Whisk the eggs, sugar and salt: In a medium mixing bowl, whisk together the sugar, eggs, and fine sea salt until smooth and the mixture becomes slightly pale in color.
  2. Warm the milk: In a medium saucepan, heat the whole milk over medium heat until it is steaming but not boiling.
  3. Temper the eggs: While whisking constantly, slowly drizzle about 1 cup of the hot milk into the egg mixture to gently raise its temperature. Then slowly pour this tempered egg mixture back into the saucepan with the remaining hot milk, continuing to whisk constantly to combine.
  4. Cook the custard: Continue cooking the mixture over medium-low heat, stirring frequently, until it thickens slightly and coats the back of a spoon, about 5 to 8 minutes. Be careful not to let the mixture boil to avoid curdling.
  5. Add the cream and vanilla: Remove the saucepan from heat and stir in the heavy whipping cream and vanilla extract until fully incorporated.
  6. Chill the mixture: Pour the custard through a fine-mesh strainer into a clean bowl or container to remove any cooked egg bits. Cover and refrigerate until completely chilled, at least 4 hours or overnight for best texture.
  7. Churn the ice cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until thick and creamy.
  8. Freeze until firm: Transfer the churned ice cream to a freezer-safe container, cover it, and freeze for at least 2 to 4 hours until it firms up enough to scoop. Serve and enjoy your homemade vanilla ice cream!

Notes

  • Use fresh, high-quality eggs and dairy for the best flavor and texture.
  • Tempering the eggs is crucial to prevent scrambling and achieve a smooth custard base.
  • Do not let the custard boil during cooking to avoid curdling.
  • Chill the custard thoroughly before churning to improve the ice cream’s texture.
  • If you don’t have an ice cream maker, you can place the mixture in a shallow container and freeze, stirring every 30 minutes until firm.
  • Vanilla bean can be used instead of extract for more intense vanilla flavor.
