Ingredients

Vegetables and Aromatics

  • 1 Tbsp olive oil
  • 1 onion, diced
  • 3 large celery stalks, diced
  • 2 large carrots, peeled and chopped
  • 1 cup mushrooms, sliced
  • 10 cloves garlic, minced
  • 2 bay leaves
  • 2 cups baby kale leaves

Liquids and Proteins

  • 8 cups chicken stock
  • 3 cups shredded rotisserie chicken
  • 1 (15 oz) can chickpeas, drained and rinsed

Spices and Seasonings

  • 1/2 tsp turmeric
  • 1/2 tsp crushed red pepper flakes
  • 1 1/2 tsp salt

Instructions

  1. Sauté vegetables: In a large pot or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add the diced onion, celery, and carrots, stirring occasionally, and cook for about 5 minutes until vegetables begin to soften.
  2. Add mushrooms and garlic: Stir in the sliced mushrooms and minced garlic, cooking for an additional 3 minutes to release their aromas and flavors.
  3. Add liquids and seasonings: Pour in 8 cups of chicken stock and add bay leaves, turmeric, crushed red pepper flakes, salt, and drained chickpeas. Bring the soup to a boil, mixing everything thoroughly.
  4. Simmer with chicken: Add the shredded rotisserie chicken to the pot, cover it, then reduce the heat to a simmer. Let the soup cook gently for 15 to 20 minutes to blend flavors.
  5. Add kale and finish cooking: Stir in the baby kale leaves, cover the pot again, and let it simmer for an additional 5 minutes until the kale softens.
  6. Serve: Remove and discard the bay leaves. Ladle the soup into bowls and enjoy this immune-boosting, nourishing meal.
