Doogh is a refreshing Persian yogurt soda made with plain yogurt, fresh mint, and sparkling water. This chilled beverage is perfect for hot days, combining tangy yogurt with the effervescence of soda and the cool fragrance of mint.

Ingredients

Yogurt Base

  • 2 cups plain yogurt, kefir, or drinkable yogurt
  • 1/3 cup fresh mint leaves, lightly packed
  • Pinch of salt
  • 1 cup filtered water (omit if using kefir or drinkable yogurt)

To Serve

  • Cold sparkling water
  • Ice cubes
  • Mint sprigs for garnish

Instructions

  1. Prepare the Yogurt Base: Place the yogurt and 1 cup of filtered water (skip water if using kefir or drinkable yogurt) into a blender. Add the fresh mint leaves and a pinch of salt. Blend until the mixture becomes smooth and pale green. You can refrigerate this base for up to 2 days if you wish to serve the drink later.
  2. Assemble the Drink: Fill 4 glasses with ice cubes. Divide the yogurt base evenly among the glasses. Top each with cold sparkling water and gently stir to combine the flavors.
  3. Garnish and Serve: Add a fresh mint sprig to each glass as a garnish. Serve the Doogh immediately for the best flavor and fizz.

Notes

  • If using plain yogurt, adding water is necessary to achieve the right consistency, but for kefir or drinkable yogurt, no extra water is needed.
  • Doogh is best served chilled with sparkling water to maintain its characteristic fizzy texture.
  • Mint leaves can be adjusted to taste for a more or less intense herbal flavor.
  • This beverage can be stored refrigerated as the yogurt base only, but add sparkling water just before serving to keep it bubbly.
