Ingredients

Mango Puree

  • 12 oz fresh ripe mangoes, peeled, pitted, and sliced

Gelatin Mixture

  • 1.5 tbsp gelatin (powder)
  • 2 tbsp cold water
  • 1.5 tbsp white granulated sugar
  • 0.54 cups full-fat coconut milk

Serving

  • 4 tbsp evaporated milk

Instructions

  1. Prepare the Mango Puree: Peel, pit, and slice the mangoes into small pieces. Place them in a blender or food processor and blend for at least one minute until the puree is very smooth with no fibrous texture remaining. For an extra smooth texture, pass the puree through a fine sieve.
  2. Bloom the Gelatin: In a large bowl, combine the cold water and powdered gelatin. Stir gently for 30 to 45 seconds until the gelatin mixture thickens and becomes gel-like. A slight aroma is normal and will dissipate later.
  3. Mix Ingredients: Add the sugar, coconut milk, and mango puree to the gelatin mixture. Stir thoroughly until the mixture is smooth and all ingredients are fully combined.
  4. Warm the Mixture: Transfer the combined mixture to a small pot. Heat gently over low to medium heat, whisking continuously to dissolve the gelatin completely. Heat for about 3 to 4 minutes but avoid boiling or simmering to maintain a creamy, smooth texture.
  5. Set the Pudding: Pour the warm mixture evenly into four greased serving bowls or silicone molds. Tap the containers lightly to release any air bubbles and smooth the surface with a spatula. Cover with plastic wrap if desired.
  6. Refrigerate: Place the pudding in the refrigerator and chill for 6 hours or until completely set.
  7. Serve: Serve the chilled mango pudding topped with evaporated milk for added creaminess and flavor.
