Creamy Peanut Dressing Ingredients

  • 1/4 cup creamy peanut butter

  • 3 tablespoons coconut aminos
  • 1-2 tablespoons honey (optional, omit for Whole30)
  • 2 teaspoons lemon juice
  • 1/4 teaspoon ground ginger
  • 1 tablespoon sesame oil
  • 1/2 teaspoon ground garlic or 1-2 garlic cloves minced

Instructions

  1. Grill the Chicken: Heat a stovetop grill pan or outdoor grill and brush with 1 tablespoon of olive or avocado oil. Grill each chicken breast for about 7 minutes per side until fully cooked. Remove from heat, let rest for a few minutes, then dice into bite-sized cubes.
  2. Prepare the Salad Base: In a large serving bowl, place the shredded green and red cabbages as the base.
  3. Assemble the Salad: Begin layering the salad by placing the grilled chicken cubes in the center of the bowl. Around the chicken, arrange the diced red bell pepper, sliced scallions, mandarin oranges, cashews, shredded carrots, and additional chopped red cabbage in groups for a colorful presentation.
  4. Make the Creamy Peanut Dressing: Add peanut butter, rice vinegar, coconut aminos, honey (if using), lemon juice, ground ginger, sesame oil, and garlic into a blender.
